Coumarin is the smell of freshly cut hay and tonka bean. It was one of the first synthetic materials ever used in perfume, and it still sits at the heart of the fougère family and most tobacco, lavender and gourmand fragrances. This grade is sold strictly for fragrance use.
What it smells like
Sweet, warm and dry, like hay drying in the sun, with a nutty almond side and a vanilla-ish softness underneath. It is fairly tenacious and stays on a strip well into the dry-down.
How perfumers use it
The classic pairing is lavender plus coumarin plus a mossy base: that is the fougère idea in one line. Coumarin also rounds out tobacco, tonka and amber accords and gives gourmands a less sugary sweetness than vanillin. It is a crystal, so dissolve it first. Ethanol, DPG or benzyl benzoate all work, and gentle warming helps.
